The Chef is ensuring that your food is prepared to the highest quality with fresh sourced ingredients and with a team that has fun cooking and delivers top class dishes on a daily basis.
Born in a multi-cultural family in Colombia, Valerio who has Colombian and Italian roots spent most of his youth in Colombia before moving to Italy and thereafter started his culinary odyssey.
“Quality, freshest, local, seasonal produce & dedicated, trained & well executed preparation” – this is the professional fundament he bases all his eagerly earned worldly culinary skills on.
Chef Valerio commenced his studies and career in one of the world’s greatest food countries “Italy”. With that knowledge in baggage he travelled and worked his way up through countries such as the U.A.E, Vietnam, Brazil, Colombia, India, Indonesia and now working in Thailand Chef Valerio brings a treasure chest of contemporary, modern Asian & vast Mediterranean expertise with him and uses his knowledge to mentor and guide our local teams of chefs. Valerio is with us already since over two and a half years and has build a fantastic team of skilled, attention to detail chefs and while widening his own Thai cooking skills is teaching all kinds of international cuisines and technics to the teams.
On a daily base Valerio is deliciously tempting our guests with his charming personality and passion towards food and culture. Our guests and connoisseurs are able to experience our restaurant’s inspiring selections of sumptuous delights ranging from timeless Thai & Asian-inspired creations, local treasures, international tuned up trendy inventions, succulent meats and fresh seafood arrangements.
His motto in the kitchens is always for our teams to have fun while doing their heated jobs in the kitchens. Daily in corporation with his loyal senior chefs he is working on building and fostering the so important team spirit and sharing to the chefs & teams his own credo “in always using local freshest ingredients and infusing the local culinary cultures to keep the food experiences of our guests interesting and stimulating. Trying out and perfecting food mixology with cuisines and technics & infusing different food styles is what keeps the Chef’s mind on top of the game. For Valerio it is vital that young chefs and apprentices or students have inner passion for cooking because only with that you become a truly great cook he says.
Our discerning guests are invited weekly to taste our varying theme nights in our two hotels and during the year enjoy the many special prepared celebration buffets. Valerio and teams will invite to our daily mouth-watering a la carte menu journey and will always ensure that each ones day starts off perfectly with our luscious & yummy buffet and a la carte breakfast selection.
For the coming season the team will focus on an even more healthy approach to the early start of the day and include a wide super foods station with fresh fruit juices and smoothies as well as yoghurts, cereals and many health boosting seeds.
Situated directly on the beautiful Natai Beach, being a highly talented chef, a yoga instructor, a water sport athlete and spiritual aware persona he is the perfect fit to keep heading the great teams of chefs at our two properties and we are proud to have him as a member of the AKARYN family.
